Remove the peel and pith of 2 oranges and cut 1/4-inch thick; arrange on an olive oil–rubbed baking sheet. Drizzle with 1 Tbsp honey and broil until beginning to char, 4 to 8 minutes. Whip 1/2 cup ricotta in a mini food processor. Spread on 4 thick slices toast. Top with broiled oranges, grated lemon zest, cracked pepper, and flaked salt.
